why nicola’s?
At Nicola’s Chocolate, everything begins with the cacao bean.
We make chocolate from scratch in our Exeter micro-factory, roasting, cracking, and refining each batch to bring out its natural flavour.
Bean-to-bar chocolate lets each origin speak for itself - sometimes bright and citrusy, sometimes deeper and more cocoa-rich. It’s a slower process, but it means we can really understand what’s happening at each stage.
We work with ethically sourced cacao, chosen for both flavour and transparency, and make everything in small batches so we can stay close to the process.
The result is chocolate that reflects the bean, not just the recipe.
It’s something to slow down with, taste properly, and enjoy.

We’ve paired our exceptional Colombian cacao with a traditional Masala Chai blend from The Local Chai Co., & added a dash of milk. The blend of organic Assam tea leaves, with warming, aromatic spices makes this the perfect spiced dark-milk chocolate.

This chocolate bar is made from cocoa beans grown on the foothills of the Rwenzori mountains in Uganda. We soaked them in a blend of rums fermented, distilled and spiced in Exeter by Two Drifters Distillery. The result is a boozy, fruity and mildly spiced dark chocolate which showcases the cacao and the rum equally.
