This chocolate is made from cacao grown high in the mountains of El Salvador. The elevation and growing conditions create a completely different flavour profile to my usual El Salvador bar.
Expect a deeper, complex chocolate, with dark caramel, tamarind and layered fruit notes.
If you’ve tried my Hacienda La Carrera bar before, this is a great one to taste alongside it and explore how much origin can shape flavour.
